Ummon (Ummon-no-mukashi) is a stone-milled ceremonial blend that Ippodo files under 'rich and robust' and describes as one of its richest, most full-forced blends for decades. It is meant for usucha and koicha rather than lattes, and creators who have tried it rate it near the top of the range (9.8/10 and 9.7/10). The catch is cost and access: $82 for a 40 g can works out to about $4.10 per 2 g bowl, and r/Matcha regulars reported it out of stock much of the time during the 2025 shortage (it was in stock when checked).

“Today I received the tin of Ummon that I ordered from Ippodo for a comparison, and I am blown away by the taste, the quality, and the difference in physiological response/energy that I get out of it.”
“Ummon notes: Strong umami Richness Very astringent Light chocolate notes Not a light-tasting matcha As a beginner, to my surprise, I prefer Kyogoku much more. Ummon right now feels too complex and astringent to my taste.”
“I've been a loyal ippodo customer for a long time, my staples being seiun and ummon. Unfortunately they're now out of stock seemingly all the time …”

FAQ
Ippodo lists Ummon for usucha and koicha (plus iced and cold-whisked matcha), not for lattes. One creator notes it turns more mellow as a latte.
Both are in Ippodo's rich category. Sayaka is the 'rich and smooth' first-taste blend at $50 per 40 g, while Ummon is 'rich and robust' with stronger umami at $82 per 40 g.
In January 2025 Ippodo said demand had surged beyond all expectations, that all its matcha varieties were limited and selling out quickly after restocks, and that supply is capped because matcha is harvested once a year and stone mills grind only about 40 g per hour. Ummon is sold in a 40 g can and a 40 g zip bag.
Ippodo's Fall 2026 update says its core matcha prices were not part of the October 1, 2026 increases, but adjustments to the core matcha offering are planned for early 2027.
